What good is experience? What does it do?

Experience itself isn't really useful, but the amount of experience you have determines your player level. There are a few reasons why having a high level is a good thing.

Your player level adds a bonus to the accuracy of your weapons in ship-to-ship combat. The formula for this accuracy is INT((Base + Attacker level) – (Deffender level/2)).

Player level is also very important when dealing with cloaking ships. You will not be able to see a cloaked ship with a level higher than your own. In return, if you have a cloaking device and have it active, no one at your own level or lower will be able to see you.

Experience is also seen as something of a status symbol. Alliances with lots of high ranking members are usually concidered very successful. A lot of alliances will actively recruit high-ranking members to increase their total experience.
